#1 – Deviled Eggs
These are often one of the most popular items to disappear of cocktail party food platters, especially when they have been made with a filling that is both creamy and tangy. In most cases, the filling comprises of mustard, mayonnaise, pickle juice and Tabasco sauce, virtually any spices or herbs can be used to add flavor to a deviled egg.
#2 – Spicy Meatballs
2 lbs. of ground beef will provide around 60 to 70 smallish meatballs and these can be drizzled with parmesan cheese after frying to provide a variation in flavor. Various dipping sauces can be provided, such as BBQ sauce, tomato and onion relish or even a combination of ketchup, mayonnaise and BBQ for a little something different.
#3 – Mini BLTs
These can be made by cutting small biscuits in half and sandwiching the bacon, lettuce and tomato between the two halves. As they can be quite filling, one to two mini BLTs per person will normally be more than enough to accompany a cocktail menu.
#4 – Corn Fritters
Every cup of fresh corn kernels used will yield around 12 corn fritters and they can be deep fried to bring out the flavor. They can be seasoned with cayenne pepper and ground herbs as well, and a great way to ensure that none are left over is to serve them with a tangy yoghurt or BBQ sauce dip.
